Cellar-master decisions in Épernay

A blend holds or falls by small calls in the cellar; Séverine Frerson, Cellar Master at Perrier-Jouët in Épernay, makes those calls for a Champagne house built around Chardonnay, Pinot Noir and Pinot Meunier. Her route into the role began with enology at the University of Reims in 2001, a technical formation suited to work where analysis and memory have to sit beside taste. Since 2018, she has held the cellar-master title at Maison Perrier-Jouët in Épernay, and the same responsibility at Champagne Perrier-Jouët. The repetition matters: house, city and title have not scattered. They have tightened into a single station.

Frerson’s own language for the work is spare. “A job is from one’s passion.” In a cellar-master’s hands, that does not read as softness. It reads as the pressure of daily judgment, the kind that keeps a house signature legible across cuvées, fruit sources and years. She has also spoken of spontaneity, authenticity and enjoying every moment; those words sit outside the chemistry of wine, but they belong to the temperament of the bench. Champagne asks for control, then asks the maker not to erase lift.

Chardonnay kept in the foreground

The program here stays within Champagne AOC and the house’s known range of sparkling wine, with Chardonnay, Pinot Noir and Pinot Meunier as the working material. Perrier-Jouët describes its production philosophy as sustainable, and its scale as large; the cellar-master’s discipline is therefore not only a matter of one favored lot or one intimate corner of the cellar. The hand has to travel through a wider system without losing proportion.

Belle Époque Brut 2014 is named among Frerson’s signature wines, and it gives the place a concrete register for her work: structure held with lift, a prestige cuvée tied to the house’s floral line. The famous anemone bottle was commissioned in 1902 by Émile Gallé, and the design still frames how many drinkers first read the wine before the cork moves. Inside the cellar, though, the question is older and quieter than the glass: how to keep freshness, fruit and texture in relation long enough for the cuvée to carry the name.

The cellar, the château and the floral line

The work happens in Épernay, among historic cellars and Grand Cru vineyards that include Château Perrier. The setting gives Perrier-Jouët its visual grammar: Art Nouveau curves, floral motifs, and the Belle Époque atmosphere that surrounds the house without needing to be announced at the bench. The room is quiet by nature, not empty. Champagne cellars make their own pace; bottles rest, lots wait, and decisions arrive in sequence rather than spectacle.

That quiet suits Frerson’s role. A cellar master does not perform the wine into being. She holds the line through tasting, selection and release, then lets the cuvée meet the room on its own terms. At Perrier-Jouët, the house style has a visible emblem in Gallé’s anemone, but the more durable object is still the glass of Belle Époque Brut 2014.
