The television work that followed, from a first WDR cooking appearance in 1996 to the long public role that made him one of Germany’s most recognisable cooks, sits beside this room rather than replacing it. This is a restaurant built for tasting menus, set menus and à la carte decisions, yet the best moments are bench-side in spirit: a sauce held to its line, a portion kept in balance, a sweet course allowed to close without excess.

    Rosin’s public career can make the restaurant seem familiar before the first course arrives, but the room asks for a slower reading. The work here has outlasted the easy contrast between television and craft. It is the same directness, brought back to a table in Wulfen.
