Coming Up
AT’s kitchen has been under Atsushi Tanaka’s ownership since 2014, and the work there is marked by control, contrast, and a clean line of composition. The plates rely on structure, but they do not sit still; precision is held against movement, and elegance is built from tension rather than ornament.
Where They Are Now
The one Michelin star awarded to Atsushi Tanaka in 2022 brought wider notice to a style that works by restraint. The cooking does not lean on excess. Instead, it finds range in a single plate, where texture, surprise, and finesse are assembled with measured force.
Signature
Camouflage: Banka Trout / Juniper / Parsley, Homard, butternut, yuzu, and Poire, betterave, rose show how Atsushi Tanaka builds flavor through layering and clarity. The dish titles themselves suggest a graphic way of thinking: Banka Trout with juniper and parsley points to a precise, woodsy freshness; Homard with butternut and yuzu sets richness against citrus; Poire, betterave, rose moves toward a softer register, where earth and floral notes are kept in balance.
In Their Words “I wanted to create a dessert with a delicious classic taste by using modern techniques and by giving it a nice contemporary look.” That line from Atsushi Tanaka lays out the method plainly: classic taste carried by modern technique, and presentation that belongs to the present. The point is not novelty for its own sake, but a dessert that keeps familiar flavor intact while changing the way it arrives on the plate. “I started watching my mother cook when I was only five and my parents took me out to restaurants. I got more interested when I was watching foreign chefs on TV and I guess it all went from there.” The craft memory here begins in domestic cooking, moves through restaurant meals with family, and then widens through televised exposure to foreign chefs. Atsushi Tanaka describes an early sequence of attention rather than a sudden conversion: watching, tasting, comparing, and building an eye for what cooking could be.
Honors
Michelin one star, awarded to Atsushi Tanaka, sits as recognition of a disciplined and exacting kitchen language. The honor reflects a body of work shaped by control, imagination, and a refusal to rely on excess for effect.
