i. Biography
Bertrand Grébaut, born in 1981 in Paris, transitioned from graphic design to cuisine, graduating top of his class at École Ferrandi before working under Alain Passard at L'Arpège and earning a Michelin star as chef at Agapé. In 2011, he opened Septime in Paris's 11th arrondissement with Théophile Pourriat, pioneering accessible, vegetable-focused neo-bistro cuisine that became emblematic of Paris's gastronomic renewal. He later launched Clamato in 2013, Cave du Septime, D’une Île in the Perche region in 2018, and Tapisserie pâtisserie locations in 2021 and 2022.
