Ebru Baybara Demir

Ebru Baybara Demir is a Turkish chef and social entrepreneur from Mardin, known for using gastronomy to support women, refugees, and local food systems. After graduating in tourism management, she returned to Mardin and opened Cercis Murat Konağı, later founding initiatives including the Soil to Plate Agricultural Cooperative and Kitchen of the Heart. She won the 2023 Basque Culinary World Prize, becoming the first chef to bring that award to Turkey, and was named a UN FAO Global Food Hero in 2024.
