He still serves as winegrower and Champagne producer, with Organic Champagne at the center of his work. The emphasis remains on listening closely to nature, respecting the pace of the vines, and allowing the cellar to become a place of considered transformation. Éric's signature dishes include Harmonie Extra Brut, Cuvée Harmonie Extra Brut, and Temporis Extra Brut.
