J.C. Poirier

Jean-Christophe (J-C) Poirier is the chef-owner of St. Lawrence in Vancouver’s Railtown/Japantown area, a Québécois and French restaurant he launched in 2017 after more than 25 years on the Canadian culinary scene. Originally from Quebec, he moved west in 2004 and worked in several notable Vancouver kitchens before opening St. Lawrence as a personal project centered on French-Canadian tradition. The restaurant has since earned critical acclaim, including a Michelin star and major local accolades such as Vancouver Magazine Restaurant Awards recognition and inclusion on Canada’s 100 Best Restaurants.
