At Bodegas Martín Códax in Cambados, Spain, the work returns repeatedly to Albariño, the grape that anchors much of Katia Álvarez’s current output. Her own wording keeps the role plain: "I work as director of winemaking at Bodegas Martín Códax." It is a line that fits a practice defined by accountability and close attention to the path from vineyard to cellar. Albariño is the specialty. It is the through-line in her present position and the varietal most closely tied to her craft, placing the work within the cool maritime character of Galicia while still allowing room for nuance, texture, and balance.

Katia's signature wines include Albariño Martín Códax, Albariño Martín Códax Lías, Albariño Organistrum, Albariño Martín Códax Gallaecia, and Burgáns. Together, they map a narrow but defined range: Albariño at the center, with variation in structure, depth, and polish across the set.
