i. Biography
The Path
Training at Kobe College gave Masako Morishita a formal base before she moved into a very different discipline: the Washington Redskins cheerleading squad at Washington Redskins (2013–2018). In 2019, Masako Morishita became founder at Otabe, and later served as executive chef at Maxwell Park in Washington, D.C. (2021–2022), where the work carried more direct responsibility for flavor, pacing, and kitchen judgment. Today, Masako Morishita is executive chef of Perry's (since 2022), where the food reads with clarity rather than excess. The line is clean: Japanese roots, American restaurant life, professional athletics, and leadership in the kitchen. Those are different systems, but they have produced a style that values precision, accessibility, and composure.
The Work Today
In 2024, the unagi donabe rice special at Masako Morishita’s kitchen showed how a donabe can carry a dish with steady heat and a focused center. By 2025, that same logic extended to Garlic Edamame Dumplings served with parmesan, lemon, and chives, and Miso Butter Clams served with miso dashi broth and togarashi. The combinations stay direct, with each ingredient doing a clear piece of the work. The structure of the menu is what is notable. Donabe rice gives the kitchen a grounded base. The dumplings bring savory weight, then sharpen it with parmesan, lemon, and chives. The clams lean into broth and depth, with miso dashi broth setting the tone and togarashi adding heat at the end. The dishes are built to read quickly, but they are not casual about balance. That is the useful shape of Masako Morishita’s cooking now: hospitality built through definition, not dilution. The aim is to introduce, to make room, and to let comfort carry information. The plate becomes a working bridge, using texture, aroma, and temperature to make the unfamiliar legible without flattening it.
Signature
Masako's signature dishes include unagi donabe rice special, Garlic Edamame Dumplings, Miso Butter Clams, Miso Togarashi Peanuts, and Braised Daikon. These dishes point to a kitchen working in balance: richness against brightness, softness against bite, depth against lift. The throughline is restraint. Technique is doing the quiet work here, and the result is food that relies on structure more than noise.
In Their Words The line is plainspoken, and that is part of its force. It sets up the practical pressure around Masako Morishita’s path, then shows how her work moved into a different kind of discipline: one defined by the restaurant, the service period, and the daily requirement to deliver.
Acclaim
Masako Morishita has received StarChefs, Rising Stars Award (2022). Masako's honors include Emerging Chef (2024) and Chef of the Year. The recognition follows the cooking itself: composed, legible, and increasingly defined by a clear point of view.
