Whisky apprenticeship often begins with repetition before it yields judgment, and Michael D'Souza’s start at John Distilleries in 2009 followed that line. He entered as an intern, working under various blenders producing blended whiskies, where the task was less about authorship than about learning how blends hold together through observation, patience and consistency. From there, the work moved into extra neutral alcohol distillation out of grain and molasses, before he progressed to whisky maker at John Distilleries. That sequence — intern, distillation, whisky maker — gave D'Souza a practical base across both blending and production. At Paul John Single Malt Whisky, that base now sits behind the role of Master Distiller and Master Blender. The position asks for control over distillation and judgment in blending, with each part serving the final shape of the whisky. In D'Souza’s case, the value of the role lies in that balance: knowing the process closely enough to steer it, and the blend well enough to leave room for time, wood and spirit to do their work.
