Noh Jin-seong

Noh Jin-seong is the chef behind Collage at Ananti at Gangnam in Seoul, where Michelin describes his cooking as French contemporary cuisine shaped by extensive ingredient knowledge, seasonal local produce, and fermentation techniques. Prior to Collage, Michelin profiled him as chef de cuisine at Dining in Space, noting that he honed his skills at Michelin-starred restaurants in Paris including Le Relais Louis XIII, Pavillon Ledoyen, and L’Arpège. A 2026 profile also says he built his career in Seoul’s French fine-dining scene, including Dining in Space and later ANANTI group restaurants, before opening Collage as his first restaurant under his own name.
