Weerawat “Num” Triyasenawat is the chef and co-owner of Samuay & Sons in Udon Thani, Thailand, a restaurant recognized for modern Isan cooking centered on local, seasonal, foraged ingredients. He is the restaurant’s head chef or executive chef, and the restaurant was founded in 2014 in his hometown with his brother Joe.
