Omar Shihab is the founder and Chief Sustainability Officer of BOCA, a modern Spanish restaurant in Gate Village 6, DIFC, Dubai, where he has been associated since 2012. BOCA is a homegrown Dubai concept focused on local sourcing and sustainability, and it received recognition including a MICHELIN Green Star and MENA’s 50 Best Restaurants placement. He was also named the Icon Award winner in the Middle East & North Africa’s 50 Best Restaurants 2025 coverage.
