i. Biography
Roxan Bourdelais is a Canadian restaurateur, dining room director, and co-owner of the two-Michelin-starred restaurant Tanière3 in Quebec City. He previously honed his front-of-house hospitality craft at celebrated Montreal establishments including Maison Boulud and Europea. In 2019, Bourdelais partnered with chef François-Emmanuel Nicol to reimagine Tanière3 within historic subterranean vaults, earning international recognition including the inaugural Michelin Guide Québec Outstanding Service Award and the North America's 50 Best Restaurants Art of Hospitality Award.
