Ryan Bailey is co-owner, director of operations and wine director of Kato in Los Angeles. He helped move the restaurant from its original small Westside space to ROW DTLA, where he built a wine program of roughly 3,000 selections and expanded its cocktail and alcohol-free offerings alongside chef Jon Yao and managing partner Nikki Reginaldo.
