Simon Kim

Simon Kim is the Seoul-born founder and CEO of Gracious Hospitality Management, the company behind COTE Korean Steakhouse, COQODAQ, and Undercote. COTE’s official team page identifies him as owner and says he opened COTE in Flatiron, New York City, in June 2017; the restaurant later expanded to Miami, while its official location pages describe COTE Miami as the Miami Design District outpost unveiled in February 2021 and Undercote as his subterranean cocktail bar beneath COTE. Michelin identifies COQODAQ as a concept from Simon Kim and Gracious Hospitality Management, and COTE’s official updates describe him as the founder representing both COTE and COQODAQ.
