i. Biography
William Simons is a Baltimore-born wine professional and restaurant manager who serves as Wine Director and Director of Operations at Albi in Washington, D.C. He joined Albi as Lead Sommelier when the restaurant opened, later became General Manager for 2.5 years, and now oversees operations and wine programs across Albi-related projects, including La’ Shukran. In 2024, he was named the MICHELIN Guide Washington, D.C. Sommelier Award winner for Albi.
