    Arrivals first, then the hand

    The menu turns on the morning's arrivals; Bertrand Grébaut, Chef, Septime, set Clamato in Paris as the seafood room beside his 11th arrondissement kitchen. His line runs through École Ferrandi, where he graduated top of his class, and through Alain Passard's L'Arpège before he opened Septime in 2011. Clamato followed in 2013, carrying a lighter station from the same discipline: less ceremony, more contact with the tide, the knife, the plancha, the plate sent when the fish is ready.

    Grébaut's authorship here is not a replica of Septime. At Clamato the method narrows to seafood and the vegetables that can hold beside it. The house works from daily arrivals from French fishing ports including St. Jean de Luz, Concarneau, and L'Île d'Yeu, with an emphasis on artisanal and sustainable fishing. The menu changes with that delivery. Oysters, tuna ceviche, tarama, clams, spider crab, scallops, skate wing, bonito rillettes, and grilled octopus appear as the season allows, not as fixed signatures to be protected from the market.

    A short menu cut by the tide

    The kitchen writes a brief à la carte menu, usually 10-18 small plates, and lets raw and barely cooked work sit close together. Utah Beach or Maldon oysters may arrive on ice with house tabasco or rancio-shallot vinegar. Razor clams take the plancha with persillade and marcona almonds. Tuna ceviche keeps its cube and acid. Skate wing can come from Finistère with Grenobloise. Scallops may stay in the shell or meet brown butter. The gesture is restraint, but not blankness; lemon, herbs, figs, rhubarb, bottarga, vermouth-katsuobushi, and bitter greens enter when they sharpen the fish rather than cover it.

    The bar keeps pace with that brevity. Clamato's wine program leans natural, with whites, orange wines, and Italian labels chosen for salt, fat, and shellfish rather than cellar theater. The list reads as part of the station, not a separate performance. A glass beside oysters has to do its work without stealing the line from the bivalve.

    The room close to the pass

    The room gives the craft little distance. Brick floors, wooden ceilings, green tables, and benches make a compact, lively place where plates pass quickly and the counter feels near the bench. The lighting stays low. The sound rises. Seafood arrives in small increments, so the table reads the kitchen by sequence: crushed ice, hot plancha, a bowl of tarama, the clean edge of ceviche, then the sweetness of maple syrup tartlet with Chantilly.

    That closeness suits the cooking. Clamato is not built around a long form meal, and the kitchen does not need one to make its point. The next plate depends on the next landing from St. Jean de Luz, Concarneau, or L'Île d'Yeu; on the table, the constant is tarama.
