Foundational kitchen discipline came through the Taj Group, where Gaggan Anand trained before later taking a chef role at Red in Bangkok, Thailand. Avant-garde technique entered the work through an internship at elBulli, a point of contact with experimental restaurant method rather than a decorative credential.
