Peter Edris tests the give of a loaf at the bench; as Chef at Frenchette in Tribeca, New York City, he works from a discipline he first learned here in 2020. Peter Edris began at Frenchette as a baker, inside a kitchen where pace and precision had to sit together. The lessons were not decorative ones. Timing, temperature, feel, and the patience to let fermentation do its work became the fundamentals of his craft.
That matters in a brasserie built on appetite rather than display. Frenchette opened in April 2018 at 241 W Broadway, in the former Le Cercle Rouge space, and it keeps French forms in motion rather than under glass. The room sends out Duck Frites, Poulet Roti, and Spit-Roasted Lobster with the assurance of a kitchen that values repetition, correction, and service at speed. For Edris, the bread work belongs to that same rhythm: grain, structure, and finish read through the hands before they ever reach the table.
Rotisserie, charcuterie, and bread as method
The program at Frenchette turns on brasserie technique with a New York tempo. The kitchen uses rotisserie and robata grill work for dishes such as Spit-Roasted Lobster and Duck Frites, while the charcuterie work reaches back to the animal itself, with three to four lambs broken down weekly and occasional pigs folded into the cycle. Côte de boeuf is dry-aged for 50 days, then brought back to the plate with maître d' butter, not buried under excess.
Edris’s part of the lineage sits in fermentation and bake. His later signatures, including Dark Malted Rye Bread, a baguette made with Malted Corn and Bolle Wheat, and Pumpkin Nectar, Fermented Corn Porridge, and Sprouted Rye Bread, make clear the vocabulary he carried forward from the Frenchette bench. They are breads identified by grain and process, not by garnish. His own note on the tools is plain: "The new Bassanina zoom oven is so much fun to bake in." That is a baker’s sentence, close to heat, timing, crust, volume, and finish.
The room around the pass
The dining room gives the work a particular register. Wood paneling, leather banquettes, Art Moderne curves, and a pewter bar set a French frame without slowing the room into nostalgia. Conversation holds at a human level. The pass keeps moving.
Natural wine and aperitif cocktails sit beside the food rather than above it, useful to the appetite and to the tempo of the meal. The menu can begin at the raw bar, move through escargots or steak tartare, and land on lobster from the rotisserie or fries cut for duck. Nothing needs to announce itself twice.
