Chan Wing-Kin is the chef at Sushi Kumogaku in Central, Hong Kong, where he serves Edomae-style omakase with subtle local Hong Kong touches. He is a Hong Kong-born chef who has honed his sushi skills at several venues and who was promoted to head chef in 2021.
