The Climb
The service floor and cellar shaped Jeremy Broto-mur’s progression: wine work here is built on repetition, timing, and control of the room. At École Des Metiers du Gers, Jacques de Romas vocational school, and Four Seasons Paris, he gathered the discipline that would later carry through each appointment. The first professional steps at Restaurant le Rive Droite in Villecomtal, France, as commis waiter, and at Château de La Chèvre d’Or as commis sommelier, established the basics of dining-room pace and wine service. Responsibility widened with each move. As sommelier at Hambleton Hall in Oakham, England, then as assistant head sommelier at Restaurant Patrick Guilbaud in Dublin from 2009, he moved into greater command of list structure and service rhythm. The same progression continued in Switzerland, where he served as assistant wine director at Restaurant de l'Hotel de Ville, adding another layer of experience in a refined, international setting. The move to the United States in 2012 placed him at Gary Danko in San Francisco as sommelier, before a return to Switzerland for the role of assistant wine director at Beau-Rivage Palace Lausanne, Switzerland. Each house added to a career built by accumulation rather than haste, with consistency and fluency carrying the work forward. In 2015, he took the role of Chef Sommelier at Cafe Boulud in Palm Beach, FL.
Today
At Café Boulud in Palm Beach, Florida, the Chef Sommelier role has been Jeremy Broto-mur’s since 2015, with Loire Valley cabernet franc as the clearest marker of his working range. In that setting, the list and the room depend on the same discipline, and his work sits at that point of contact.
