i. Biography
Rocío Martínez is the encargado and cook at Pacto Raíz on C/Espartinas 5 in Madrid, where she helps lead the restaurant’s Spanish-Peruvian-Mexican menu alongside André Chumbe and Álex Marugán. She is the day-to-day head of the project. She also holds a minority ownership stake in Pacto Raíz. Prior to Pacto Raíz, she worked in catering, Saddle, and Tres por Cuatro; one profile also cites earlier work at The Good Food Company and Café Tornasol.
