William Cao is a San Francisco-born mixologist and the bar manager at Michelin-starred restaurant The Progress. After developing his cocktail craft at establishments such as Chaya Brasserie, Prospect, and Mister Jiu's, he joined The Progress in 2021 to oversee its beverage program. His ingredient-driven approach incorporates his Chinese and Vietnamese heritage, earning him a StarChefs Rising Star Bartender award.
