Scale kept close at the bench

Jody Williams keeps scale close at the bench as Chef at Buvette in West Village, New York City, where a croque madame can carry the same weight as a larger plate. Her work here has rested on intimacy and control of scale since 2011, not as decoration around the food, but as part of the method. Before Buvette, Williams cooked in New York City at Tappo, Morandi until 2008, and Gottino until 2010, kitchens that placed timing, service, and room reading into the same discipline as seasoning. Centre College sits earlier in the path, a different kind of education before the kitchen took over.

At Buvette, Williams founded and operates a restaurant that asks for attention in small measures: steak tartare, brandade de morue, coq au vin, octopus salad, braised leeks with shallot vinaigrette. The work is traditional in approach, but the handling is not heavy. Her wider practice has kept that structure visible. Buvette since 2011, Via Carota since 2014, and Commerce Inn since 2021 each treat the restaurant as a composed thing, with the room, plate, and pace held together rather than left to compete.

Small plates with a bistro hand

The program at Buvette works through small plates and à la carte ordering, with French bistro cooking set into a gastrothèque frame. The dishes named by the house tell the scale: tartare cut for immediacy, brandade de morue built from salt cod and potato, coq au vin kept close to its braise, leeks served with shallot vinaigrette rather than buried under garnish. A petit burger belongs to Williams’s signature language for the same reason. Proportion matters here.

The beverage side follows the room rather than standing apart from it. Wine, cocktails, and digestifs form the line of service, with a curated wine program suited to a place that moves from daylight into candlelight without changing its grammar. The cooking does not chase novelty. It depends on repetition, on the pass knowing when a familiar dish has landed cleanly, and on the restraint to let a plate remain small without feeling slight.

    Marble, keepsakes, and the room

The room carries the same compression as the menu. Buvette is built as a miniaturized Parisian café, light-filled by day and candlelit in the evening, with antique furniture, heirloom keepsakes above a marble bar, and baskets of seasonal ingredients close enough to read as part of the mise en place. Tree-lined street views soften the edge of the West Village outside, while the counter and the room keep the service intimate.

That intimacy is not precious. It is practical. Williams’s best rooms understand that atmosphere is made through use, not display. At Buvette, the proof sits above the marble bar.
