i. Biography
Diego Galicia is the chef and co-owner of Mixtli in San Antonio, Texas, where he and Rico Torres lead the restaurant as executive chefs. Mixtli opened in 2013 and is known for progressive Mexican cuisine that explores the culinary regions of Mexico; the restaurant later became San Antonio’s first Michelin-starred restaurant in 2024. Galicia is a graduate of the Culinary Institute of America and as originally from Toluca, Mexico.
